How to Roast Lamb

Ingredients:

  • Lamb
  • Salt and Pepper
  • Olive Oil
  • 1 x Garlic Head
  • 1 Onion
  • 2 Rosemary Sprigs
  • 3 Cups Beef Stock
  • 3 Cups Water

Method:

Recipe for Roast Lamb:

Preparation

Preheat the oven or BBQ to 170C.

Place the Lamb on a chopping board. Pat down any moisture on the Lamb skin with a paper towel until the Lamb is completely dry.

Season the lamb by sprinkling and rubbing in salt and pepper.

 

Roasting

Place the garlic, onion and rosemary in a high metal roasting tray.

Place the seasoned lamb in the roasting tray so it sits mostly on the garlic and onion.

Drizzle lamb with Olive Oil. Pour the beef stock and water around the lamb.

Cover the roasting tray with a lid.

Place the roasting tray in the oven and roast for 4.5 hours.

Continue to check on the lamb every 30 minutes. If you seethe liquid dry out, top the baking tray with more water.

After 4.5 hours, check to ensure the meat is tender enough by prying a bit off easily with a fork. If not, return, covered to the oven until well browned and tender.

 

Carving the Lamb

Once the meat is tender, you will only need 2 forks to tear the meat off. Serve with your desired sides.
